Client Spotlight | Sur Lie

Congratulations to Craig and Mowgli Rivard, the team behind Little Fox, who recently opened Sur Lie right across the street in St. Louis’ Fox Park neighborhood. The w**e-led bistro brings together European-inspired cooking, a thoughtful w**e list, and the neighborhood hospitality the couple is known for, all in a design-forward space where you can stop in for a glass or settle in for the evening.

We partnered with the Sur Lie team on their brand identity, website, and PR, helping bring their vision into focus and share their story ahead of opening.

Make sure to visit the next time you’re in St. Louis!

Hospitality in 2036 📝

Our founder Elizabeth D. Tilton reflection on where we were, where we are, and where we are going.

It’s rare to get a moment to slow down and reflect in this industry. Another service. Another opening. Time is precious, and it seems to move quicker every day. This year, we felt the industry was at an inflection point, and that spending time in thought was too critical to skip. The result: Hospitality in 2036.

Elizabeth D. Tilton built the first version of it for the FAB FAB Conference’s tenth anniversary in Charleston this summer, and couldn’t stop iterating on it, so she expanded it into something bigger — her honest attempt to answer what actually broke in this industry over the last ten years, where we really are right now, and what this business looks like a decade from now. All argued through the P&L, because the numbers are what we actually have to look at in this business.

From Our Clients | Companion Hospitality

“Oyster Sunday has been one of the most definitive partners for Companion Hospitality. From operations, HR, finance, and digital marketing, Oyster Sunday doesn’t feel like a third party consultant but a partner with you as you traverse the ever-changing landscape that is the hospitality and culinary profession. We would not be where we are today without them.”

The best work is built together. Thank you Greg, Daisy.Nan.Ryan, and the entire B E L L ‘ S team for trusting us along the way.

“Service tends to be warm, sunny and totally unobtrusive, but behind it there’s a more serious attention to detail—a fine-dining sensibility. The menu is à la carte, a mix of dishes to share and ones that could work for just one person. But food doesn’t just arrive as it’s ready. Servers consult with you a little (yes, you should order the fantastic sesame-butter rice with the trout), then explain with confidence exactly how they plan to cluster dishes together.”

Congratulations to Little Mountain on their The New York Times Critic’s Pick and three-star review! ⭐️⭐️⭐️

Client Spotlight | The Warbler Hotel

Among the ancient oaks along St. Charles Avenue in New Orleans, a city that has always known how to celebrate, The Warbler Hotel is the kind of place that invites you to stay awhile, whether that means lounging poolside on the rooftop, strolling to Spyre for a day of wellness, or settling in at The Café, Mildred’s, or Upstairs.

We worked with their ownership team to refine their Brand Values and build out an extensive Service & Culture Manual for their first hotel project and its F&B outlets. They just released room bookings for their grand opening, beginning in October, so if you’re dreaming of a trip to New Orleans, take advantage of their early Founders Rate.

A big congratulations to Oyster Sunday clients Agnes and Sherman and Little Mountain on being named to bonappetitmag’s Best New Restaurants of 2026.

Opening a restaurant takes more than talent and vision. It takes a clear point of view, the right team, a strong financial foundation, and the systems to turn a vision into something that can thrive day after day.

We’re proud to support talented and thoughtful clients across finance, operations, HR, and brand so they can focus on doing what they do best and getting the recognition they deserve for it.

Client Spotlight | Lion’s Share

Lion’s Share is a chef-led, hearth-driven tavern in Nashville’s Sylvan Park neighborhood, inspired by London drinking clubs and classic hunting and fishing lodges. Bringing “comfort and adventure” to the west side, the restaurant pairs wood-fired, seasonally driven dishes with a luxe-but-playful room that feels right for celebrations.

We partnered with the Lion’s Share team across PR, HR, and building a website that reflects the warmth and ambition of the restaurant. We’re so proud to see Lion’s Share recognized as one of Modern Luxury Nashville’s Best New Restaurants.

Client Spotlight | Hot Bread Kitchen

Since 2008, Hot Bread Kitchen has created economic opportunity in NYC through free culinary job skills training, food entrepreneurship programs, and support for people who face barriers to meaningful careers in food.

We were engaged by their team to develop a financial management curriculum for their Seed Program, a 12-week course covering the A to Z of launching a food business.

We’re incredibly proud to support Hot Bread Kitchen’s work equipping New Yorkers with the tools to build sustainable businesses and lasting careers in food, a mission very aligned with our own.
