'Papas arrugadas' with mojo: the most authentic flavour of the Canary Islands. 🥔🌶️
Did you know…?
1️⃣ Their origin is in the sea. Traditionally, potatoes were cooked in seawater, and as they dried in the sun they became "wrinkled" with a thin layer of salt. Today, plenty of salt is still used in the cooking to achieve the same effect. 🌊
2️⃣ The "bonita" potatoes are unique. The most used variety is the papa bonita or colour potato, with thin skin and small size, cultivated on the islands since the 16th century. 🥔
3️⃣ Mojo is the soul of the dish. Green mojo (with coriander, parsley, or both) and red mojo (with choricero pepper or paprika) are sauces of Guanche origin that have become a hallmark of Canarian gastronomy. 🌿
4️⃣ They're not peeled. They're eaten with the skin, and the custom is to "wrinkle" them in your hand before dipping. The more wrinkled, the more flavour. 😋
5️⃣ They're a dish with history. They were already served in the 16th and 17th centuries, and today they're the essential accompaniment to meats, fish… or simply on their own, as a tapa. 🍽️
Have you tried them with both mojos yet?
