🍇 September means grape harvest season in France! 🍇

If you were in France right now, you’d see vineyards buzzing with activity. Les vendanges — the grape harvest — is a pretty big deal.

Grapes have been growing in France for centuries, and the harvest is about so much more than making wine. It’s a huge part of French agriculture, culture, food, and tradition. The timing is carefully watched because the grapes have to be picked at just the right moment — and different regions and grape varieties ripen at different times.

And since we’re a French bakery, we thought we'd celebrate grape season in our own little way. 😉

🍇 Our canelĂ©s come from Bordeaux, one of France's most famous wine regions. They're traditionally baked in those little fluted, barrel-like molds and have a caramelized outside with a soft, custardy center.

🍇 We have Merlot grape juice from France — because not every grape has to become wine! 😄

🍇 And then there's our pain aux raisins — the classic French pastry filled with pastry cream and little bits of raisins (dried grapes!).

So while the vineyards in France are busy with les vendanges, we're bringing a few of those French grape traditions right here to Johnson City.

Did you know we sell more than just French pastries? We also have a whole line of jams, candies, and other French goodies!

Today’s post is all about our jam. ❀

We carry Bonne Maman jams in flavors you don’t typically find here in the U.S. — chestnut, mandarin, black cherry, mirabelle plum, fig, and quince. We also have blackcurrant and apricot & lavender from another French brand.

These aren’t unusual or “fancy” flavors in France. They’re the kinds of jams you’ll find on breakfast tables all over the country.

Jam is a big part of French breakfast — spread on bread, paired with a buttery croissant, or enjoyed with a little butter underneath. And then there’s le goĂ»ter — the traditional afternoon snack around 4pm, when kids (and adults!) often have pretty much the same thing they had for breakfast. 😋

Another difference? French bread and pastries aren’t overly sweet. Bread is generally unsweetened or only lightly sweetened, and even croissants are much less sweet than many pastries here.

So if you’ve been eyeing those jars of jam on our shelves
 this is your sign to try one. ❀

We highly recommend it with a real French butter croissant. 😉

We get a lot of questions about whether or not we serve anything that is gluten free.

Our strawberry, pistachio and chocolate macarons are gluten-free! 🎉

(One important note: our macarons are made in the same kitchen and prepared in the same space as products containing gluten, so we cannot guarantee that they are free from cross-contact. Also, our vanilla and coffee macarons are not gluten free.)

And if you’ve been into the bakery and noticed that our macarons aren’t quite as brightly colored as some of the ones you see elsewhere
 that’s intentional. 💛

A lot of macarons get their beautiful, super-bright colors from artificial food dyes. We’ve made the choice not to use artificial colors or other unnecessary artificial ingredients in our bakery.

We know that some children (and people) can be particularly sensitive to artificial food dyes and that’s one more reason we’re happy to leave them out.

So yes, our macarons might be a little more naturally colorful — but that’s exactly how we want them. 😊

INGREDIENT SPOTLIGHT 🎉 Organic raw cane sugar 🍯

There’s a reason we choose organic raw cane sugar for our pastries instead of standard white sugar.

Raw cane sugar hasn’t been stripped down and heavily refined. It still holds onto some of its natural molasses and trace minerals, which gives it a little more depth and that subtle warm, almost caramel-like flavor. You can actually taste the difference in our pastries.

And the organic part matters to us, too. Organic cane sugar comes from sugar cane grown without synthetic pesticides or chemical fertilizers, and it doesn't have the chemicals that are added in the refining process (like phosphoric acid, calcium hydroxide (lime), and sometimes sulfur dioxide).

It’s the same reason we use organic flour. We’d rather start with ingredients that are as close to their natural state as possible before they ever make it into our kitchen.

Tuesdays and Wednesdays are our slower days and we haven't been selling out on those days. We've also increased production and have plenty to choose from throughout the day.

✹ PRODUCT SPOTLIGHT: ÉCLAIRS 🎉

Let’s talk about Ă©clairs!

An Ă©clair is a classic French pastry made from light, airy choux dough. It’s baked until it puffs up, leaving the inside hollow, then filled with a creamy pastry filling and finished with a sweet glaze: the fondant.

And if you’ve ever looked at an Ă©clair and thought, “Isn’t that basically a long donut?” — not quite! 😉

So what makes an éclair different?

đŸ„ The dough: Éclairs are made with choux pastry — a simple dough made with butter, water, flour, and eggs. It puffs up from steam as it bakes.

đŸ”„ The cooking: Éclairs are baked, while traditional donuts are fried.

✹ The texture: Instead of being dense and bread-like, an Ă©clair has a light, airy, hollow shell with a delicate crispness on the outside.

And fun fact: the word Ă©clair means “flash of lightning” in French. âšĄïž It’s thought to refer either to the shiny glaze that catches the light or to how quickly you’ll eat one because they’re so good!
