We love growing native food producing plants and particularly those with a healthy benefit and those that are productive without a lot of time commitment from our very busy little farming family. These Jerusalem Artichokes are all that! Not even closely related to the artichoke you are thinking of, these are in the sunflower family and get these cheerful blooms on top of 8-10 foot tall stalks in the summer. But the real magic is happening underground... After the first couple of freezes, we will be able to dig these tasty tubers all winter. They cook and taste like white potatoes, look more like a ginger root, and have PROTEIN, low glycemic activity, and lots of other health benefits. We froze a pile of them last winter and will be enjoying oven fries and soups for the freezer as we await the new crop. And one more part I love.... As we dug up last year's crop, there were root parts naturally left behind. Without a bit of effort or care, the patch looks as vigorous this year as it did last year. That's my kind of farming!!

THANK YOU to all the folks who came out last night to support Second Harvest Food Bank of Northeast Tennessee! My sweet hubby scooped HUNDREDS of gelato samples!!
