We mostly bake rusks and cookies here at Rosie's Rusks, but every now and then I like to step out of the rusk tin and bake something a little different!

Since it's my birthday today, I treated myself to a homemade Lemon Meringue and a creamy Biscoff Cheesecake. 🎂🍋✨

After all the baking, mixing, and decorating, it's finally time for the best part... the tasting! 😋
