I was defrosting precooked Thai Style Chicken Mince when Joe bought a bucket full of Rhubarb yesterday. I chopped them up and freeze 2 packets. I left out 350g of fresh Rhubarb for my experiments.
Rhubarb 食用大黄 is rarely used in Chinese cooking so I researched hard to find out how to turn them into savoury Asian soup.
I made a Chinese Hot & Sour Soup for lunch. He needs some soup with bread for dinner so I turned another batch into Rhubarb Tomato Soup.

We experienced heavy frost for 2 nights and many vegetables called it a day. I ended up having to pick small Bitter melons, 2 kg of Rosella and 1.8 kg of green tomatoes.
I tasted the green tomato decided it will be great in a salad so I adapted the Burmese Green Tomato Salad to use whatever available in our pantry and garden.

Note:
- I cooked the onion because raw onion gives me digestion problem.
- can substitute dried shrimp with fish sauce
- can replace peanut with toasted sesame seeds

Avgolemono is a classic Greek Lemon & Chicken soup that uses a velvety egg-and-lemon mixture to thicken the broth and create a rich, creamy texture without any dairy.
It is a complete meal on its own and makes good use of everything in your garden in fall such as celery, dill, kale and lemon.
It is even easier if you have shredded rotisserie chicken in your freezer.
Cook a batch and bottle them. Today is Thursday and I am done cooking for the whole week. Chillax time 😎.
