For our breakfast, we try to make conscious choices wherever possible by using organic ingredients and local products from the region. Our coffee, for example, is organic, and we love working with quality products that reflect our commitment to sustainability and authenticity.

Let me tell you a story...
After the death of his wife in 1482, Maximilian I turned against Bruges. He banned festivities and, through his advisor Pieter Lanchals, imposed heavy taxes.

The people of Bruges rebelled. In 1488, they captured the emperor and imprisoned him in the Craenenburg House, forcing him to watch the ex*****on of his trusted friend.

Legend says Maximilian later took revenge. In memory of Lanchals (“long neck”), he ordered the people of Bruges to keep 101 white swans on their waters forever… or the city would fall.

To this day, the swans still glide through Bruges — a reminder of history, or perhaps a curse.
