Sunday morning sunshine is creating a soft glow in our foyer today. It never ceases to amaze me that an architect 200 years ago, designed this house with so many windows! Even on a grey day, it’s a happy house. And the interior shutters are artwork in themselves. Historical homes tell so many stories. Maison Maitland.

Welcome to our dining room. Chock-full of period antiques, linens, crystal and china, it represents a time when formal dining was a daily occurrence. For nearly 200 years this room has welcomed guests to the table for conversation, good food and wine. If only the walls could share the stories! This is the olive oil I reach for again and again.

Gamma Import Co. brings it to Canada from a small farm in Tuscany, where the olives are hand-picked and pressed within 24 hours. Perfect for drizzling, especially on a Caprese salad, originally created on the Island of Capri.

For this summer salad, I layered local heirloom tomatoes Golden Creek Horticulture with water buffalo mozzarella, pickled red onion and fresh basil, then finished everything with a generous pour of the oil and a little sea salt. You can add a splash of balsamic too, if you wish.

When the ingredients are this good, there is no need to do too much. Just a few simple things, served at their best. You too can enjoy this delicious olive oil, available in our online shop!
