Under the warmer sun, the mountains begin to soften.
Snow slips gently from the rooftops, tracing quiet paths down stone and wood, as winter slowly releases its hold over Crans-Montana.

The air feels different now: it’s lighter and brighter.
You can hear it in the distant trickle of melting snow, see it in the patches of green reappearing beneath your feet.

Outside, spring is beginning to shift the mood of the mountains. In Crans-Montana, the air moves between crisp mornings and softer afternoons, where winter’s last breath still lingers but something warmer is undeniably on its way, despite the snow last week.

This dish captures that beautiful in-between.

Delicate scallops meet the earthy depth of collybie mushrooms, lifted by the gentle sweetness of nashi pear and the quiet warmth of Espelette pepper. Comforting, yet bright. Elegant, yet deeply soothing.

Like spring itself, it is a balance of softness and awakening, a plate designed to be lingered over, slowly, as the season turns outside our windows.
