Hotel Silberstein's AQUA Restaurant presents a Galapagos Enchanted Islands Menu "Antrophos". This innovative and gastronomic creation is the result of anthropological research that dates back to the era of the Galapagos Islands colonization. Through the ideas and creativity of Chef David Ibarra, the technical and scientific support team, and anthropologist Cristina Ahassi, we bring forward a menu

that combines different techniques, unique forms of preparation, and distinguished presentation of dishes that maintain the avant-garde touch of the chef. The menu contains Ecuadorian, local Galapagos ingredients, organic when available. These are used depending on the eco system and are sourced environmentally friendly and responsibly, depending on the seasonality. We maintain direct contact with local farmers to sustain our project and ensure sustainability of resources while maintaining and caring for the environment. We look forward to seeing you at AQUA!
