Something truly special is coming to Restaurant Escorpio again this year.
We are preparing an exclusive Tuna Ronqueo experience — a traditional Spanish ritual where premium bluefin tuna from Cádiz is cut by hand by a professional.
The name “ronqueo” comes from the distinctive sound the knife makes when cutting along the backbone of the tuna. It is a tradition especially known in areas such as Barbate, Cádiz, and it can produce up to 24 different cuts of tuna.
This will be more than a dinner — it will be a live culinary experience built around Mediterranean flavour, tradition and craftsmanship.
