La Donaira is a luxury eco retreat which has been hailed as one of Spain’s most exciting agricultural projects and is paving the way for eco-tourism. The 750-hectare farm is based largely on a concept known as regenerative agriculture, whereby the fertility of the soil is increased by the process of integrated farming, permaculture and organic management. The farm is home to a range of rare breeds

, including Pajuna cattle, Merino sheep and over 70 exquisite Lustiano horses, which are the oldest saddled horse of its kind in the world.

In summer, the hills of the Serranía de Ronda turn into gold. The grasses dry, the light flattens, and by late afternoon the whole landscape holds a colour no name has ever done justice.

Those who come back know to expect it. Those who come for the first time don’t know what they’re seeing until the sun starts to drop over Andalusia. And something wonderful to look at while enjoying tapas and drinking cava at our sunset spot.

Many guests who usually avoid gluten tell us they eat our sourdough every morning and feel nothing but good.

That’s because real sourdough takes days. A live culture, slow fermentation, nothing else. That process naturally breaks down gluten and phytic acid, making it easier to digest, better preserved, and genuinely kinder to your gut than anything made in a factory in three hours.

Every morning, Paqui makes it by hand. The same way it has always been made.

Most restaurants design a menu, then find the ingredients. We do it backwards. 🚜

Getting the best from an ingredient starts long before it reaches the kitchen.
It begins in the soil, in the season, in the hands that picked it this morning on our organic farm.

Our chefs create each dish around what the land provides today, guided by seasonality, sustainability, and respect for ingredients, rather than a fixed menu.
A tomato in late summer doesn’t need much. Just heat, high-quality olive oil, and time to concentrate its natural flavor.

Lamb from our own flock is cooked slowly, at low temperatures, honoring the muscle, the animal, and the farming process behind it. Fresh goat’s milk calls for simplicity, culture, and patience to become handmade ricotta.

They know when to add fire, when to step back, and when to let ingredients speak for themselves.

Save this for when you’re ready to eat the way food was meant to be eaten. 🍅
