Ewes Curd & Old Spot Pork

Old Spot Pork Cheek from Garstang, cooked down with Caramel, Seaweed and Lemongrass. Alongside, Whipped Scottish Ewe’s Curd, a Pork Sauce infused with Charcuterie, and a Warm Salad of Fine Beans, Broad Beans, Peas and Runner Beans, finished with Pancetta and Pork Fat.

Picked Walnut Ketchup brings a touch of acidity and richness, while Garden Cresses — Leek Tops, Oxeye Daisy and Celery — add freshness.
