Earlier this season, our Executive Chef Russell joined Rick, our fish supplier, at the market to see what was looking its best that morning. Freshness, sustainability and quality are always at the heart of the conversation.
The result? Red gurnard, served with asparagus, broad beans, peas and a wild garlic sauce - a dish inspired by the very best of the season.
