Almost a year ago, Labombe by Trivet opened where the Met Bar once stood, its own idea born decades earlier, in a French school exercise book, when Jonny Lake was asked to imagine a fictional restaurant. ⁠

Since then: a Eurocentric w**e list built around Georgia, Armenia and Turkey alongside Burgundy and Piedmont, a fire-led kitchen under Head Chef Evan Moore, and, within the year, a Michelin star of its own. ⁠
