On World Environment Day, we're celebrating some hopeful wildlife updates from Cornwall and the incredible work of Cornwall Wildlife Trust a charity we've been proud to support for several years.

🌱 Beavers have returned to Cornwall for the first time in over 400 years, Four pairs have been released where they are already busy building dams and creating wetlands that slow the water flow, creating habitats for a huge variety of wildlife and making Cornwall more climate resilient. We're proud to have contributed to the Rewilding Helman Tor appeal that helped make their return possible.

🌱Choughs went extinct from the county in the 1970s and was absent for decades. Today, thanks to careful coastal habitat management these striking, red-billed birds are thriving once more. We have even been lucky enough to spot them here on our own clifftops at Mawgan Porth.

🌱 Last winter, humpback whales were spotted feeding off the coast of Mawgan Porth, right on our doorstep. Humpback numbers have increased greatly since the ban of commercial whaling in the 1960’s but their return to Cornwall reflects healthier seas and richer feeding grounds.

🌱 And closer to home, our grounds continue to provide a haven for wildlife, from adders and visiting choughs to pollinators and wildflowers. By caring for our landscape with nature in mind, we're helping create space for wildlife to flourish.

These updates remind us that when nature is given the chance, remarkable things can happen.

We're delighted to welcome Chris to Scarlet this spring ❤️

With a background shaped in fine dining, he brings a wealth of experience to Scarlet. However what resonates most, is the natural alignment between his approach to food, and our own ethos here on the coast.

In 2019 he stepped away from the kitchen to cultivate his own market garden and food forest, growing sustainable produce for local restaurants. This immersion in the rhythm of the seasons deepened his understanding of how ingredients evolve throughout the year, and how best to honour them.

It's an approach that sits wonderfully at Scarlet, celebrating each season through thoughtful partnerships with local farmers, foragers and fishermen, allowing the landscape around us to shape what arrives on the plate.

Join us to experience the offerings at Scarlet restaurant, which is open to both non-residents and hotel guests, featuring an à la carte menu, a seven-course tasting menu, lunch, and afternoon tea.
