We wanted to make the most of the fun days out this summer, so we decided to go strawberry picking!
With so many delicious recipes you can make using fresh produce, we decided to turn some of our strawberries into a delicious Strawberry Compote, perfect for adding to yoghurt, pancakes or desserts… Cooked on our Popty Stout! 🔥
Here’s the recipe if you’d like to make your own using just three simple ingredients:
🍓 Wash 700g of strawberries thoroughly under cold running water, then remove the greenery and cut them into quarters.
🍋 Place the strawberries in a medium saucepan and add 100g granulated sugar and the juice of ½ a lemon.
(🍯 Honey is a great alternative to sugar)
🔥 Bring to a gentle simmer over a medium heat and cook, stirring occasionally, until the strawberries have softened and the juices have thickened slightly, around 20 minutes.
🥄 If you prefer a smoother consistency, mash the fruit with a fork or blend until you reach your desired consistency. Continue to simmer for around 5 minutes, stirring frequently, until the mixture has reduced slightly and thickened.
❄️ Remove from the heat and allow to cool to room temperature before transferring the mixture to a sterilised, airtight container and refrigerating.
This can be refrigerated for up to a week or frozen in an airtight container for up to three months.
