We loved reading this article by entitled “Hotels that dare to be different”.

“Interiors should reveal where you are,” Lulu explains. “But too often, they are reduced to beige, taupe and cream.”

She cites Thyme in the Cotswolds as a perfect example of design rooted in place: walls painted in Edward Bulmer’s natural shades, blush-pink bathrooms, floral fabrics designed in-house, and the Meadow Spa bathed in calming greens that mirror the surrounding fields.

“Every detail reflects its setting and the family’s vision. It is deeply personal, and guests take that with them,” she says.

Scroll through some of our bedrooms, each inspired by a different botanical and designed to immerse you in the local landscape.

Thank you and Nicky Rampley-Clarke for including our x .by.thyme ‘Florence’ headboard in the article on designer bedrooms.

This collection of headboards is part of the debut collaboration with our friends at Bertioli, the sibling brand of the stunning destination .england in the Cotswolds.

“Our collections are inspired by life at Thyme, where a passion for the land, food and entertaining, merges with a love of craftsmanship, beauty and conservation.” - Caryn Hibbert, Founder and Creative Director of Thyme & Bertioli.

Based just down the road from our workshop, we have worked with the team there designing bespoke pieces of upholstery including sofas, headboards and slipper chairs for a number of bedrooms in the hotel, with inspiration taken from Thyme’s beautiful surroundings.

“Every bespoke creation is guided by our unwavering commitment to sustainability, comfort, and exceptional craftsmanship. Whether the design leans modern or traditional, each piece is built using the same natural materials and time-honoured upholstery techniques that define our core collection, guaranteeing both superior comfort and enduring quality.”

Introducing the radicchio (Chicory rossa di treviso), a vibrant and slightly bitter member of the chicory family, easily recognised by its deep red leaves and crisp white veins.

Native to Italy, this leafy vegetable adds colour, crunch and complexity to both raw and cooked dishes.

When grilled, roasted or sautéed, its sharpness mellows, revealing a subtle sweetness and nutty depth. Rich in antioxidants, vitamins K, C and dietary fibre, radicchio not only brightens plates, but also supports good health.

It pairs beautifully with rich cheeses, citrus fruits, balsamic vinegar & olive oil, making it a versatile addition to seasonal menus.

Whether tossed through a salad or charred on the grill, radicchio brings a distinctive Italian flair to autumn and winter cooking.

We encourage you to try our ‘Chicory Fleece’ cocktail, a delicious blend of homemade radicchio syrup, gin, lemon and foaming bitters.
