Ask around for the best fish cutter in Barbados and you’ll keep getting sent to the same spot — a hand-painted fishing boat up on the sand at the north end of Speightstown.

That’s Caboose. No building, barely a menu, just the morning’s catch grilled fresh and tucked into a soft salt-bread bun. Get it loaded (egg and cheese — trust us), and go easy on the Bajan pepper sauce. It does not take prisoners.

Nothing here is fast, and that’s rather the point. Order at the boat, grab a Banks, find a table under the shade trees, and let the wait turn into the whole afternoon.

Catch changes daily, cash or card both fine, and it’s fish only — but if you’re after the honest, un-gentrified west coast, you’ve found it.
