Meet our beekeeper, Zaharias 🐝🐝

"Beekeeping on the island of Crete dates back to the Minoan era about 4000 years ago. My involvement with beekeeping begins in 1989, following suit to what my parents lovingly preserved. Over the years I have increased the number of bee colonies and today I maintain 120 bee colonies (hives). During the year I move the bees to take advantage of the blooms offered by the Cretan nature. It is amazing that there are 2000 species of plants on the island and 160 of these are considered endemic.
During the winter and spring they are located in the village of Chonos in Rethymno while in the summer I move them to the western end of the mountain of Psiloritis to benefit from the rich flowering of thyme and other herbs. Then I transfer them to the prefecture of Lassithi, an area where the parallel honey production of late thyme and pine yield the natural mixture of honey (pine thyme) which is the basic honey production that I make.
This honey is an amazing combination of aromas with rich nutrients and at the same time has the property of crystallizing slowly. "🍯
