At Michelin-starred Alfred Keller Restaurant, our chef brings together local ingredients, island traditions and contemporary culinary techniques to create imaginative interpretations of familiar flavours.

Inspired by the traditional dish sardines in saor (srdele na savur), our chef has created a fish-shaped snack featuring a bay leaf cracker, roasted sardine cream, and a gel made from pickled onions and raisins.

Continuing the story of the connection between land and sea, our lamb tartare with salted anchovies and capers, served with seaweed crisps, offers a unique combination of flavours that reflects the character of our island.🌊
