Az ÉS Bisztró megújulása nem az identitásváltásról, hanem a meglévő értékek kiemeléséről szólt: az eredeti karaktert ötvöztük egy kifinomultabb, hívogatóbb hangulattal.

A Zsidai Gasztronómiai Csoporttal közös munka célja az volt, hogy az indusztriális stílust melegebb atmoszféra váltsa fel. Emellett a konyhát is korszerűsítettük, hogy a csapat még jobb helyi alapanyagokból tökéletesíthesse a megszokott ízeket.
