I’ve been sitting here for the last hour trying to fit the last 7 years into 20 photos… I’ve realised that’s completely impossible. 😂
So much has changed. We’ve learned so much along the way, and looking back, it honestly feels like we’re two completely different people. When we arrived in Ireland we were only 25 and 27 years old. Looking back now, we were pretty naive, a little clueless at times, and just trying to figure life out really.
We had never studied hospitality, marketing, business, accounting… none of it. Just our little young life experience. On top of that, we were just one year into our relationship. We went from dating to suddenly living together, working together, and spending pretty much 24 hours a day together.
Looking back, that’s quite a way to test a relationship. 😅
If someone had told us back then that we’d settle in rural Ireland and did all this, we’d have laughed. But somehow, life brought us here.
The first few years were interesting. Covid happened. There was plenty of trial and error, lots of mistakes, long days, loooong talks and moments where we wondered what we had got ourselves into.
Slowly, season after season, we started finding our feet. We improved things, learned a whole lot, made changes, and little by little Mossie’s started to feel like us.
In 2023, I received my Irish permanent residency. I still remember that feeling. It was the moment we looked at each other and thought…
“Okay… yeah, we’re doing this. We’re staying here. Let’s make something out of this place!” 🥹
Looking back now, I’m just so grateful we took the leap. It hasn’t always been easy, and it certainly hasn’t been perfect, but it’s given us a life we never could have imagined.
