Farranfore strawberries, at the height of their season, are at the heart of one of Dinesh’s latest creations at The Peregrine.

Our Strawberry and Lemon Verbena Eton Mess brings together fruit grown just a short distance from Killarney with fragrant lemon verbena, creating a dessert that feels unmistakably of this place and this time of year.

Dinesh takes us through the inspiration behind the dish, the local produce that shaped it, and how each element comes together on the plate. A celebration of Kerry’s summer harvest, seen through the eyes of our pastry kitchen.
