गुच्छी पुलाव :
भीगे हुए और कटे हुए गुच्छी (Morels) को देसी घी, जीरा और खड़े मसालों (इलायची, दालचीनी) के साथ खुशबू आने तक भूनें। अब इसमें बारीक कटा प्याज और अदरक-लहसुन का पेस्ट डालकर सुनहरा करें, फिर भीगे हुए बासमती चावल मिलाकर हल्का चलाएं। चावल से डेढ़ गुना गर्म पानी और नमक डालें, और धीमी आंच पर दम (steam) देकर पकाएं ताकि इनकी सोंधी खुशबू बनी रहे। अंत में केसर वाला दूध और हरा धनिया ऊपर से डालकर गर्मागर्म परोसें।
