ONCE A FAVOURITE - ALWAYS A FAVOURITE
LAAL MAAS
Traditionally prepared with wild game hunted by the Rajputs where the meat was slow-cooked with yoghurt, garlic and local red chillies. The chillies gave the curry its deep red colour and helped balance the strong flavour and aroma of the game meat.
In earlier times, the dish was simply referred to as Maas, meaning meat. The name Laal Maas, came in later as the dish because popular in Rajasthan and other parts of India.
The dish was closely connected with Rajput hunting traditions and was especially enjoyed by the men after returning from a hunt. Over time, wild game was replaced by mutton, and Laal Maas became one of Rajasthan’s best-known meat dishes.
