L’ospitalità è fatta soprattutto di gesti che nessuno dovrebbe quasi accorgersi di aver ricevuto, come una coreografia quotidiana, eseguita quando il ristorante è ancora in silenzio.

Si allungano sui muri, entrano dalle finestre e cambiano forma insieme alle montagne.

Forse è per questo che qui non tutto si mostra subito.

D'altronde, come in ogni buon romanzo, la parte più interessante è quasi sempre quella che resta tra le righe.

Noi sospettiamo che scelga anche a chi farli incontrare.

I suoi signature nascono da prove, intuizioni, botaniche e piccoli azzardi ben calcolati, fino a trovare quell'equilibrio misterioso per cui nel bicchiere ogni cosa sembra essere sempre stata destinata a stare accanto all'altra.

Il fuoco ha una memoria antica: è stato il primo modo che abbiamo avuto per trasformare ciò che la terra ci offriva e, ancora oggi, conserva qualcosa di primordiale: scalda, brucia, cambia le cose e lascia sempre una traccia.

Nel percorso degustazione «Fuoco» di chef Stefano Landoni, quella traccia arriva in tavola con «diaframma, tamari, patate e bernese al larice».

Un piatto in cui il bosco incontra la brace e la montagna sembra, per un momento, avvicinarsi al tavolo.

Fire holds an ancient memory: it was the first way we learned to transform what the earth gave us, and even today, it retains something primal. It warms, burns, transforms and always leaves a trace.

In Chef Stefano Landoni’s 'Fuoco' tasting menu, that trace arrives at the table in the form of 'skirt steak, tamari, potatoes and larch béarnaise'.

A dish where the forest meets the embers and, for a moment, the mountains seem to draw closer to the table.

Quando il sole scivola dietro le Alpi Biellesi, le luci de La Bursch si accendono una dopo l’altra, tingendo il borgo di riflessi ambrati, mentre la Valle Cervo si raccoglie nel silenzio della natura nel suo vestito serale.

Se esistesse una disciplina olimpica per rimandare il momento di alzarsi da tavola, St'Orto sarebbe un ottimo campo di allenamento.

Il bistrot de La Bursch vi aspetta per pranzo e cena tutti i giorni, ad eccezione del mercoledì sera e del giovedì.
