🤎 How was the Biscotto Cegliese born?
There are recipes that are not written down.
They are passed down.
This is one of them 👇🏻
Its story begins a long time ago, in the country homes of Ceglie Messapica.
We do not know the exact date of its origin.
Because this recipe was not born in books, but passed from family to family.
It was prepared with what the land offered: almonds, fruit turned into jam, honey, eggs and lemon.
Simple ingredients that, together, gave life to the Biscotto di Ceglie.
The protagonist was the almond.
Among the local varieties there was the Cegliese, called *du riviézz*.
Harvested, left to dry in the sun and shelled, it was used partly raw and partly toasted.
At the center, a heart of jam, traditionally cherry or grape.
So every biscuit contained the flavors that the same land had given throughout the year.
It was not the sweet treat of an ordinary day.
It was prepared for celebrations, special occasions and important family moments.
Especially for one: the wedding.
It was offered to guests and even placed in the wedding favors of the bride and groom.
Preparing it did not only mean making a sweet treat.
It meant preparing for a day to remember.
So the recipe passed through generations.
Every family preserved its own way of preparing it. And that biscuit born in homes became part of the identity of Ceglie Messapica.
Then the countryside changed.
Some ancient local varieties became less and less cultivated.
And with them a piece of this story also risked disappearing.
Protecting this biscuit, therefore,meant protecting much more than a recipe: local crops, the work of artisans and the memory of a territory.
This is how the Consortium for its protection and promotion was born.
In 2001 it became one of the Italian Traditional Agri-Food Products.
In 2010 it became a Slow Food Presidium.
A recognition that protects its connection with the territory.
Today that little biscuit continues to tell the same story: the countryside, the almonds, the homemade jams, the celebrations and the weddings.
Because some recipes do not only serve to remember a flavor.
They serve to remember where we come from.
And inside a Biscotto Cegliese there is still a piece of Ceglie Messapica.
