At Shangri-La, sustainable gastronomy is more than a date on the calendar. It is the foundation of how we bring thoughtful choices to every table through Rooted in Nature, our long-standing culinary programme.
This Sustainable Gastronomy Day, we celebrate a beautifully simple framework: knowing where our ingredients come from, how they are nurtured, and how they reach our plates. This mirrors our profound dedication to local sourcing, seasonal harvesting, and reducing food waste—ensuring you can savour cuisine that is both authentic and thoughtfully crafted.
At Shangri-La Le Touessrok, Mauritius, this commitment comes to life through our Chef’s Garden, where fresh herbs, edible flowers, and seasonal produce are grown just steps from our kitchens, ensuring exceptional freshness while reducing food miles. Our on-site beehives further support biodiversity while producing natural honey for our culinary creations. We also work closely with local fishermen who follow responsible and sustainable fishing practices, helping to protect Mauritius’ marine ecosystem while bringing the freshest daily catch to our tables.
As we come together to mark this occasion, we invite our guests, colleagues, and communities to join us in making mindful food choices that respect the world we share.
