Over the past years, Wouter has built an impressive career at some of the Netherlands’ most acclaimed restaurants, each with its own style and level of excellence. Having worked at Michelin-starred Merlet, Sous Chef at 212 and Chef de Cuisine at De Juwelier, Wouter joins us with a clear vision: ingredient-led cuisine, exceptional technique and a menu shaped by the seasons.

His arrival also marks the evolution of our restaurant into The Dining Room at the Amstel. A place where guests come not only for lunch or dinner, but for a memorable afternoon or evening at the Amstel Hotel. A dining experience that brings together outstanding cuisine, warm hospitality and one of Amsterdam’s most iconic settings.

Together with our culinary team, Wouter is shaping an exciting future for dining at the Amstel.

Every grand hotel has its secrets. Few ever become a novel.

Last night, the Spiegelzaal became the setting for the launch of “In de schaduw van het Amstel” / “The Age of the Amstel”, written by .

What began as a search for a timeless way to capture the soul of the iconic hotel grew into a unique collaboration: a novel where fact and fiction intertwine to reveal the layered history of the Amstel Hotel in a way it has never been told before.

Inspired by archival discoveries, conversations with long-standing colleagues and countless hours spent wandering the corridors of the hotel, Sarah wove fact and fiction together to bring past and present together in a story that lingers long after the final page.

Guests stepped into The Age of the Amstel for an evening of champagne, cocktails inspired by the characters of the book, hidden bites among historical curiosities and a first glimpse into this remarkable literary journey.

The Dutch edition In de schaduw van het Amstel is now available in bookstores across the Netherlands.

A limited English hardcover edition, The Age of the Amstel, has been created exclusively for the Amstel Hotel — a collector’s piece shared with our guests on special occasions, inviting them to discover the history of the house in a way that stays with them long after they have left.

A Meeting of Two Amsterdam Icons

On 20, 21 and 22 February, in celebration of Lunar New Year, the Amstel Hotel and Restaurant Hoi Tin come together for a unique four hands afternoon tea, uniting two institutions rooted in craftsmanship, heritage and hospitality. From the banks of the Amstel River to the heart of Chinatown on the Zeedijk, this collaboration bridges worlds, flavours and generations.

The Amstel Hotel has welcomed guests since 1867, standing as Amsterdam’s first luxury hotel and a timeless symbol of elegance and innovation. Just a short walk away, family run Restaurant Hoi Tin has been a cornerstone of Chinatown for over 50 years. Founded by Mister Man, the restaurant is now led by the next generations of the family, Susan together with daughter Marijke and son Ethan, and is celebrated for its authentic Cantonese cuisine and traditional in house bakery.

This afternoon tea is a shared celebration of legacy, rooted in tradition and brought together at one table. A special selection of teas will be served by .nl during the experience.

𝘛𝘩𝘦 𝘈𝘨𝘦 𝘰𝘧 𝘵𝘩𝘦 𝘈𝘮𝘴𝘵𝘦𝘭 was born from the desire to tell the layered history of the Amstel Hotel in a way that feels intimate, accessible and alive - shaped by time, memory and many hands. A story created to capture the soul of the Amstel Hotel like never before.

Author Sarah Meuleman has written a compact novel where fact and fiction intertwine, capturing the spirit of this iconic building where previous centuries meet the present, and storytelling becomes an experience in itself.

A story that weaves past and present, lingers long after the last page, and invites you to experience the Grande Dame of Amsterdam beyond her walls.

As the Amstel clock prepares to strike midnight and a new year begins, we look back with heartfelt gratitude on the many beautiful moments that shaped 2025. From golden sunset evenings on our iconic waterside terrace and a wonderful riverside summer at the Amstel, including a special collaboration with our sister property and their iconic lobster roll, to joyful celebrations such as Amstel Pride Bingo with and the magical Christmas Tree Lighting with and , it has truly been a year to remember.

Above all, we wish to thank every guest who joined us and shared these moments with us. Your presence, celebrations and stories are at the heart of everything we do.
