The name “The Stables” is a nod to the site’s history. Many locals will know that in 1857, the neighbouring Criterion Hotel stood on the corner of Bridge and Criterion Streets, while the Criterion Stables occupied this very piece of land, providing a place for horses to rest after long journeys. More than 160 years later, the site once again offers travellers a place to stop, rest and recharge.
