In Hatsu Hana Tei, nothing embodies this more than the Kaiseki-style meals consisting of soup, appetizers, and several dishes, artfully prepared following the dictum of perfect freshness. Aside from being able to prepare meals kaiseki-style, Hatsu Hana Tei’s menu is also enhanced by several regional specialties created by its Japanese chef who does delightful things with the freshest local seafood and produce. A variety of more popular Japanese a la carte entrees as well as sushi are also included in the wide menu. Ukiyo-e, meaning “pictures of the floating world,” is a celebrated genre of Japanese art that flourished during the Edo period (1603–1868). Created primarily through woodblock printing, Ukiyo-e made art accessible to everyday people, capturing the fleeting beauty of life, leisure, and nature in a rapidly changing society.

These prints often depicted kabuki actors, geisha, sumo wrestlers, landscapes, flora and fauna, and scenes of daily life. Each artwork was a collaborative effort between the artist, carver, printer, and publisher, requiring exceptional precision and craftsmanship. Natural pigments, delicate linework, and balanced compositions gave Ukiyo-e its distinctive aesthetic—flat areas of color, strong outlines, and a poetic sense of movement.

One of the most iconic masters of Ukiyo-e is Katsushika Hokusai, whose “The Great Wave off Kanagawa” remains one of the most recognizable images in world art. Alongside artists like Utagawa Hiroshige and Kitagawa Utamaro, Ukiyo-e influenced not only Japanese culture but also Western art movements such as Impressionism and Post-Impressionism, inspiring artists like Monet, Van Gogh, and Degas.

Did you know that?
Urushi, or lacquer, comes from the varnish made from the sap of the urushinoki, better known in English as the Japanese lacquer tree or Japanese sumac. The items made from and with this lacquer are known in Japan as either urushi nuri or shikki. Lacquer has been used in Japan since the Jomon period, anywhere from 15,000 to 2,300 years ago.

Lacquerware is a good, sustainable option. Traditionally made lacquerware is tree sap layered over wood — there are no harsh chemicals involved in the production of these items. They’re also great at insulating or keeping foods warm. Wood heats internally, and as such, urushi bowls are very popular for soups and Japanese curries, too. Not only is lacquerware beautiful, but it’s also an extremely good investment: these items will last longer and become more beautiful with time. There are many commercialized lacquer ware for sale, some made from plastic so if you want to buy the authentic Shikki, you should buy it in a Japanese specialty shop.
