Among the easy crowd favorites on UMA's refreshed menu is the Mackerel Bicol Express. The dish traces back to our chef's grandmother's kitchen. The classic version leans on fatty pork and the rendered oil of coconut milk. Here, we use only fresh mackerel, making for a lighter take on the original but still carries the familiar taste of coconut cream and umami-rich guinamos (fermented shrimp paste).

The answer was already growing in front of us.

When we started curating UMA's new menu, we asked ourselves what we thought was a simple question: what is Filipino cuisine for us? We wanted to understand the depth of that word, and how we wanted to shape it at our restaurant.

Our answer goes like this.

The inspiration behind UMA's new menu is an inflection of our lived experience as Filipinos. Everything that has passed through our shores and been welcomed into the kitchens of every home, the places we've traveled and eaten our way through, and closest to home, the land that continues to shape how we cook. It is a culmination of those who have influenced our way of cooking, our taste, and the stories of life we carry.

That is how we created this menu. Straight from the source, and from the experiences we, as Filipinos, have shared and lived.

Something new is taking shape at UMA.

UMA was built on a simple promise: to grow alongside South Farm, and to introduce Bohol through flavors that are entirely our own.

For our culinary team, every dish begins with understanding the source and what it has to offer. This connection between farm and kitchen brings the character of Bohol closer to every table, rooted in the land, its seasons, and the people who cultivate it.
