Condado Collection was proud to be part of Sabores que Transforman, an evening at Condado Vanderbilt Hotel benefiting the Chef Mario Pagán Scholarship Fund at Universidad Ana G. Méndez.

Supporting this scholarship fund reflects our commitment to creating opportunities for the next generation of culinary and hospitality professionals in Puerto Rico and investing in the talent that will continue to shape and elevate our industry.

We are especially proud of Chefs Juan Peña, Natalia Rivera, Sebastián Rosado and Nasha Fondeur and their teams, alongside Chef Víctor Rosado and his team from our sister property, Four Seasons Resort Puerto Rico, who came together in support of this meaningful cause.

For our chefs, the evening was also a personal tribute. Each has crossed paths or collaborated with Chef Mario Pagán throughout their careers, making the opportunity to reinterpret some of his iconic dishes through their own culinary perspective even more meaningful.

Congratulations to our chefs for representing us with talent and purpose, and to Chef Mario Pagán for an impact that continues to inspire our culinary community and open doors for the generations that follow.

Great culinary experiences begin with a story, and every ingredient has one to tell.

As part of Marriott’s Culinary Excellence experience in the Dominican Republic, members of the La Co**ha Resort culinary team had the opportunity to learn, connect, and bring new inspiration back to our Collection.

From visiting a local farm and discovering the journey of cacao and the art of chocolate, to cooking for Fundación Almuerzo Infantil as part of a community challenge, each experience reinforced an important idea: culinary excellence goes far beyond what is served on the plate.

It’s about creating a purpose behind every dish, inviting our guests to become part of the experience, and finding thoughtful ways to maximize every ingredient while reducing food waste.

We are proud to see our team continue learning, evolving, and bringing new ideas to the table—quite literally. Congratulations to our La Co**ha Resort culinary team for representing us and continuing to elevate the experiences we create for our guests.

At 1919, celebrating Puerto Rico means honoring the richness of our Island, its people, and the ingredients that define its culinary identity. 🇵🇷

From August 20–22, Executive Chef Ciarán Elliott and the 1919 team will present Coastal’s Tasting Menu, a six-course experience inspired by Puerto Rico’s local catch and created in collaboration with Alexandra Soto of Crudo Seafood.

Behind each plate is a commitment shared by our team: supporting local fishermen, respecting the product, and allowing the flavors of Puerto Rico to take center stage.

Congratulations to Chef Elliott and the entire 1919 team for continuing to showcase our Island through their craft while celebrating the people and local products that make each experience possible.
