Father's Day is Sunday, June 21. Carambola Restaurant will be serving its Sunday brunch from 8 a.m. to 2 p.m. — ocean views from every table, Chef Jorge Mercado's Caribbean kitchen, and the wild horses occasionally wandering past the lawn outside.

This is one of the busiest Sundays of the year at Carambola, and the dining room fills quickly. Reservations are strongly recommended for any party size, including outside guests not staying at the resort.

The new moon is tomorrow. June 14 at 10:54 PM AST. June 14 and 15 are the two darkest-sky, brightest-bay nights of the year on Vieques.

If you can get on a tour boat tonight or tomorrow, do it. Mosquito Bay does not look like this for the rest of the month. Once we cross into the waxing-moon phase, the glow fades against ambient moonlight, and the full moon on June 29 triggers the regulatory three-night closure of the bay.

A guest told us recently that the strangest thing about Blue Horizon is how quickly you stop being surprised by the horses. The first morning, a herd walks past the infinity pool and you can't believe it. By the second morning, you're refilling your coffee and not looking up.

The wild Paso Finos have been roaming this stretch of coast longer than the resort has existed. They show up when they want to. They drink from puddles. They graze on the lawn. Sometimes a foal sleeps in the shade by the dining room.

The most common question we get from bio bay travelers: where do we stay the night of the tour?

Mosquito Bay tours run after dark. Boats return late. Vieques is an island — there's no last-minute ferry back to the main island once the tour ends. The simplest way to do a Mosquito Bay night is to stay on Vieques.

Carambola Restaurant has earned its reputation for one dish first: the Caribbean French toast. Thick brioche, cane syrup, a tropical-fruit finish, and the open ocean on every plate.

Executive Chef Jorge Mercado leads the kitchen at our oceanfront restaurant in Vieques. Brunch is served Monday through Friday from 8 a.m. to noon, and Saturday through Sunday from 8 a.m. to 2 p.m. — the dining room opens directly to the Caribbean.

Vieques' wild Paso Fino horses spend most of the year inland, but summer is when the heat pushes them toward the coast. The Blue Horizon property has been one of their favorite shaded oceanfront grazing spots for as long as we've been here — and that's 33 years.

This is the season when guests at the pool look up to see a foal stepping past the lanai. When the morning coffee gets interrupted by the soft sound of hooves on grass. When the dinner crowd at Carambola pauses mid-bite because the herd has wandered past the dining room.

We can't promise the horses will show up on any given day — they're wild animals, not a resort attraction. But June through August is the window when they almost always do.

The brightest two nights of the year for Mosquito Bay are coming. The new moon on June 14 falls at 10:54 PM AST, which means the nights of June 14 and 15 will be the darkest sky over the world's brightest bioluminescent bay.

Tour operators on Vieques run sold-out boats during this window. Staying overnight on the island matters more than people realize — last-ferry timing and tour return times rarely line up for a same-day return to the main island.
