This September, we celebrate the opening of the Saxon School. Follow the main street through Criș (Kreisch, Keresd) and, where the road turns towards the castle, you will find a piece of the village’s history returning to life. Bringing the building back has taken years, but the promise behind it goes back much further. Rebuilt from the ground up following the original architectural plans and with every historic detail carefully recovered, the Saxon School returns with a renewed purpose: to keep the history and heritage of this land alive.

This September, Terroir 7 opens its doors as the new fine dining restaurant of Bethlen Estates Transylvania, beginning with a new seasonal menu rooted, as always, in the land around us. Every plate led us here. Every season, ingredient and finishing touch helped shape the way we cook today. Now, that journey is about to enter a new chapter. Almost ready to serve.

Many of you asked what it feels like to stay here. The honest answer is that we wanted the houses to keep the feeling of home: quiet, private, lived-in, close to the garden and to the rhythm of the village. A place where you do not arrive to be loudly impressed, but to slowly belong for a few days.
Late summer has a very particular way of moving through the village. It stays a little longer in the garden, touches the old walls in the afternoon, slips through the trees and makes even the quietest corner feel alive.
Some days here are not really about doing much. You wake up slowly, take your coffee outside, sit in the grass for longer than planned and let the house, the light and the silence do the rest.
From the outside, everything may look simple. But that’s the beauty of it. These houses were never meant to become something else. They were meant to be lived in again and quietly shared with those who understand this kind of beauty.

Our kitchen takes the ingredients, combinations, sensibilities and culinary memories of Transylvania and asks one question: what else might they become?
