Anyone who has walked from villa to beach knows what we are planting into. Sand.
It drains almost as fast as the rain falls, and holds very little of what a vegetable wants. Which is why the organic garden has never been something we added. It is something the resort has been building, season after season, out of what it already has.
Every kitchen trimming, every fallen leaf and garden cuttings goes back into the compost, and then back into the ground. Slowly, sand becomes soil.
The newest beds are in now. Okra and corn, Thai basil and eggplant, lemongrass, papaya and banana, mango and dragon fruit.
The gardens are open to wander whenever you like. Ask for a tour and our garden manager will walk you through what is growing and why. Book a private cooking class and you will gather the ingredients yourself first, straight from the beds, before cooking them in your villa. And somewhere along the way, look for the bird hide. It is worth the detour and the sitting still.
