Balık av yasağının kalkmasıyla deniz yeniden sofraya yaklaşırken, ilk yağmurlar toprağı uyandırıyor; taze otlar, yeni kokular ve mevsimin kendine özgü ürünleri mutfağın yönünü değiştiriyor.

Şef Ulaş Durmaz ile, denizden toprağa uzanan bu kısa ama özel dönemi; mevsimin ürünlerini, bölgenin gastronomisini ve sonbaharın mutfağa kattığı hikâyeleri konuştuk.

September and October are among the most generous months for this region’s cuisine.

As the fishing season reopens, the sea finds its way back to the table, while the first rains awaken the soil. Fresh herbs, new aromas, and the season’s distinctive produce begin to reshape the kitchen.

Together with Chef Ulaş Durmaz, we explored this brief yet remarkable period stretching from sea to land — the ingredients of the season, the region’s gastronomy, and the stories autumn brings to the kitchen.
