Casa Lavanda is delighted to welcome Restaurante El Chato, named The Best Restaurant in Latin America 2025 by Latin America’s 50 Best Restaurants.

On September 2, El Chato’s founder and chef Álvaro Clavijo joins Chef Emre Şen at Casa Lavanda for an exclusive four-hands dinner.

From the Amazon to the Caribbean, Clavijo’s cuisine draws on Colombia’s extraordinary biodiversity and his close relationships with farmers, fishermen and foragers. For this special evening, his distinctive interpretation of Colombian ingredients will meet Emre Şen’s nature-led cuisine, rooted in Casa Lavanda’s biodynamic garden and the local produce of Şile.

Two kitchens shaped by different landscapes, brought together by the same respect for locality, biodiversity and the people behind every ingredient.
