Lake Martin near Breaux Bridge hosts one of the largest wading bird rookeries in North America each spring, with thousands of egrets, herons, and roseate spoonbills nesting in the cypress trees rising straight out of the water.

The sheer density of birds during nesting season is almost overwhelming, entire trees appearing to bloom white with egrets while spoonbills add flashes of pink throughout the canopy, all against a backdrop of still, dark swamp water.

Conservation groups have worked for decades to protect the rookery from disturbance, and the payoff is a wildlife spectacle so reliable that photographers plan entire trips around the few weeks each year when the nesting colony is at its peak.

Whether you’re an experienced birder, a nature lover, or picking up binoculars for the first time, this family-friendly festival will celebrate the incredible **birds, wildlife and natural beauty of Plaquemines Parish and the Mississippi River Delta.**

Once a year the little Cajun town of Abbeville cracks more than 5,000 eggs into one giant cast-iron skillet and cooks an omelette big enough to feed a crowd. 🍳 The Giant Omelette Celebration is one of the most joyful traditions in all of Acadiana.

The story goes back to Napoleon, who supposedly loved an omelette so much in a French village that he ordered a giant one made for his whole army. That village belongs to a worldwide brotherhood of omelette towns, and Abbeville proudly joined the fold in 1984. Every November the Confrerie parades the eggs through Vermilion Parish and cooks them up right in the town square. 🥚

Cooks in tall white hats work the skillet with long wooden paddles while the crowd cheers and the smell of butter drifts down Main Street. It is silly and grand and deeply Cajun all at the same time. Only in South Louisiana would a town throw an entire festival around a single perfect omelette. 🎉
