FALL IS THE FLY ANGLER'S MONTH IN VENICE

Spring gets the attention. October gets the fish.

The river drops, the marsh clears, and the reds you have been hearing about all year are up on the flats with their tails in the air. Cool mornings, no wind until noon, and half the boats that were down here in May.

This is sight fishing. You see the fish. You make the cast. You watch it eat. Or you watch it turn off and you make a better cast.

The front came through overnight.

You hear it before you see it. The wind swings around to the north sometime after midnight and the whole house creaks. By daylight the river is flat as a tabletop, the air is in the fifties, and there is a jacket on every porch chair that was not there yesterday.

Coffee tastes different at 58 degrees. Everybody is up early and nobody needed an alarm.

The boats run out into water that cleaned up overnight. Reds you could not see last week are tailing in a foot of water. The bite is slow for an hour while the pressure settles, then the sun climbs, the flats warm, and it turns on all at once.

Back at the lodge the pool sits empty for the first time since April. Nobody misses it. The oyster deck is where the afternoon goes now, sleeves down, a pot of something going inside, and the first woodsmoke of the year drifting in from somewhere down the road.

Chef Raymond has been waiting on this all summer. So has the gumbo pot.

This is the Delta in October. Short sleeves at noon, long sleeves at dark, and the best fishing of the year in between.

IN THE KITCHEN WITH CHEF RAYMOND: CHARGRILLED OYSTERS

First cool night of the fall and the oyster deck is back in business. There is a reason it has its own name at this lodge.

INGREDIENTS
2 dozen Louisiana oysters on the half shell
2 sticks butter, softened
6 cloves garlic, minced
1 tbsp lemon juice
1 tsp Worcestershire sauce
1 tsp hot sauce
1 tsp Creole seasoning
1/2 cup grated Parmesan
1/2 cup grated Romano
Chopped parsley
French bread

THE METHOD
Shuck the oysters and leave them in the deep half of the shell with their liquor. Do not rinse them. That liquor is the whole point.

Mix the butter, garlic, lemon juice, Worcestershire, hot sauce, and Creole seasoning into a paste.

Get the grill hot. Hot enough that you do not want to hold your hand over it.

Set the oysters on the grate and drop a spoonful of the butter on each one. It will melt, run over the edge, and catch fire. That is supposed to happen.

When the edges of the oyster start to curl, about three or four minutes, hit each one with the cheese and let it melt. One more minute. Pull them.

Parsley on top. Bread in hand.

THE RESULT
Smoky, garlicky, dripping. Sop the shell with the bread and reach for the next one before somebody else does.

Two dozen feeds four people at a normal table. At the lodge it feeds two.

Q4 is here. Somebody in your office is about to book a hotel ballroom, a projector, and a chicken dinner nobody remembers.

OCTOBER VENICE FISHING REPORT

The river is falling, the first fronts are lining up, and the biggest fish of the year are closer to the dock than they have been since spring.

INSHORE: This is the bull red run. Schools of them staged at the passes and along the beaches, and when the tide moves they eat like they are being paid to. Cracked crab or a big live bait on the bottom, or a popping cork if you want to watch it happen. Every one over 27 inches goes back in the water, and nobody on the boat will care. Trout and slot reds are still gorging on the shrimp coming out of the marsh, and the cleaner water pushing in behind each front only tightens the bite. One regs note: flounder close statewide October 15 through November 30. If you want one in the box, the first two weeks of the month are it.

OFFSHORE: Shrimp boat season. The fleet is working the fall shrimp, the tuna are stacked up behind them eating the bycatch, and this is the stretch when the 100 plus pound yellowfin show up. Live hardtails and chum behind the boats, live bait at the floaters when we run that way. Wahoo start showing as the water cools. Mangrove snapper are still piled on structure for anybody who wants a fish fry. Red snapper stays closed.

Bottom line: October is when Venice earns both nicknames. Redfish Capital in the morning, Tuna Town by lunch.

Best bite: Bull reds at the passes, yellowfin behind the shrimp boats
Best technique: Bait on the bottom for bulls, chum and live bait offshore
Best conditions: Falling tide, clean water behind a front, calm morning seas

"Husband and I stayed here for 3 nights. Food and fishing was awesome. Owner Raymond was very engaged; staff was great. Enjoyed a great day of inshore fishing with Captain Mike (alias Chief), he was awesome. Would def. recommend."

Chief puts people on fish. Raymond makes sure nobody leaves the table hungry. Same story, every group.

Today is National Hunting and Fishing Day.

It lands in the middle of teal season this year, which feels about right.

Down here that is not a hashtag holiday. Hunting and fishing built this part of Louisiana. They pay for the habitat, they carry the traditions, and they are the reason a kid in Plaquemines Parish grows up knowing how to read a tide before he can drive.

To the guides who run it every day, the folks who take a kid on their first hunt, and every guest who has ever hauled a heavy box back to our dock: this day belongs to you.

DUCK SEASON IS SET. YOUR DATES ARE NOT.

The teal are flying right now, and the big calendar is locked in behind them.

East Zone duck season opens November 21 and runs through December 6, then comes back December 19 through January 31. Youth and veteran days November 14 and February 6.

Every year the same thing happens. The November opener fills first, the December split goes next, and somebody calls us in January asking what is left. Do not be the January phone call.

A Saltgrass duck trip is the full deal. Marsh blinds at daylight, hog hunting and bull reds in the afternoon, a hot meal and a warm lodge at dark.

TEAL SEASON OPENS SATURDAY

September 19 through 27. Nine days. That is the whole season, and the blue wings are already stacking up in the marsh.

Teal do not wait on you. They are the first birds south every fall, they come off the water like fighter jets, and by the time most of the country is thinking about duck season they are gone.

Here is what a Saltgrass teal hunt looks like:

IN THE KITCHEN WITH CHEF RAYMOND: GRILLED TEAL POPPERS

Teal open September 19. This is what happens to them after.

INGREDIENTS
8 teal breasts, sliced into strips
8 oz cream cheese
Fresh jalapenos, halved and seeded
1 lb bacon, cut in half
Creole seasoning
Cracked black pepper
Your favorite dark b**r or Italian dressing for the marinade
Toothpicks

THE METHOD

Marinate the teal strips at least 4 hours. Overnight is better. Teal is rich, dark meat and the marinade keeps it tender on the fire.

Load each jalapeno half with cream cheese. Lay a teal strip on top. Wrap the whole thing in bacon and pin it with a toothpick.

Grill over medium heat, turning every few minutes, until the bacon is crisp and the duck is medium rare. Fifteen minutes, give or take. Do not cook teal past medium. That is the only rule in this kitchen that is not negotiable.

Pull them, let them rest five minutes, then stand back from the platter.

THE RESULT
Smoky, spicy, gone. A platter of these does not survive twenty minutes at the lodge.

Shoot your birds in the morning. Eat them off the grill that night. That is September at Saltgrass.
