Labor Day at the lodge.

SEPTEMBER VENICE FISHING REPORT

September is the turn. The crowds thin out, the white shrimp pour out of the marsh, and everything with fins knows it.

INSHORE: The fall shrimp migration is the whole story. Trout and reds are ganged up on the outflows eating everything the tide pushes at them. Live shrimp under a popping cork or anything white and moving. Bull reds start showing at the mouth of the river this month and it only gets better from here. Tripletail still hanging on the floating structure.

OFFSHORE: Yellowfin stay in their best stretch of the year. August through October is prime and September is the middle of it. Blackfin thick, mangrove snapper stacked on structure, wahoo and mahi still in the spread. Red snapper closed August 9 when the state quota filled. That is what a seven day a week season looks like.

AND THE BIRDS: Teal open September 19. More on that below.

Bottom line: fall starts now and the water shows it first.
Best bite: Yellowfin offshore, trout and reds on the shrimp flush
Best technique: Popping corks inshore, live bait at the rigs
Best conditions: First light, falling tide, ahead of the fronts

The rooms are large and can accommodate large groups of people. The lodge overlooks the Mississippi river. The food was very good and enough. You did not leave the table hungry."

TEAL SEASON IS 26 DAYS OUT

Blue wings start pushing south while the rest of the country is still thinking about summer. Louisiana's teal season runs September 19 through 27. Nine days. That is the whole thing.

Then the calendar gets serious. East Zone duck season opens November 21 and runs through December 6, then comes back December 19 through January 31. Youth and veteran days land on November 14 and February 6.

Here is the part nobody wants to hear in August. Those dates go early. Every year. The groups hunting Saltgrass in November called us in the summer.

And hog hunting runs year round in the marsh. Hunt at daylight, fish the afternoon, eat like a king at dark.

Get your dates on the board before somebody else takes them.

IN THE KITCHEN WITH CHEF RAYMOND: LOUISIANA BBQ SHRIMP

Nothing barbecue about it. No grill, no bottle of sauce. Just head on shrimp swimming in black pepper and butter with a loaf of French bread to chase it. Fall white shrimp season opens in August and this is the first thing we cook with them.

INGREDIENTS
2 lbs head on shrimp, shells on
2 sticks butter
1/4 cup Worcestershire sauce
1/4 cup beer or shrimp stock
Juice of 2 lemons, plus the squeezed halves
6 cloves garlic, minced
2 tbsp cracked black pepper (yes, that much)
1 tbsp Creole seasoning
1 tsp cayenne
2 sprigs rosemary
Hot sauce to taste
French bread for serving

THE METHOD
Melt one stick of butter in a heavy skillet over medium heat. Add garlic and cook about a minute, until it smells right.

Pour in the Worcestershire, beer, and lemon juice, and drop the squeezed lemon halves in the pan. Add black pepper, Creole seasoning, cayenne, and rosemary. Simmer 5 minutes and let it tighten.

Lay the shrimp in a single layer. Three minutes, flip them, three more. They are done when they curl and go pink. Do not walk away from the stove.

Kill the heat. Cut the second stick of butter into pieces and swirl it in a little at a time until the sauce goes glossy. That is the whole trick.

Hot sauce to finish. Serve in a bowl with the sauce poured over.

THE RESULT
Peppery, buttery, messy. Roll your sleeves up and use the bread. Anybody eating this with a fork is doing it wrong.

THE RED SNAPPER CLOCK IS RUNNING

Louisiana opened May 1 and has stayed open seven days a week. Four fish a person. Sixteen inch minimum. No weekends only, no lottery, no guessing.

Here's the catch. The season runs until the state hits its quota, then it shuts down. Through July 12, LDWF reported 659,232 pounds landed against an 882,439 pound allocation. That is 74.7 percent gone with the best weather of the summer still in front of us.

Last year Louisiana fished 200 days and closed in November. This year the numbers are moving faster.

Venice puts you closer to the snapper grounds than anywhere else in the state. Short run out, heavy box coming in, back on the pool deck by afternoon with Chef Raymond already working on dinner.
If snapper was on your list this year, quit waiting on it.

AUGUST VENICE FISHING REPORT
August in the Delta is hot, sticky, and loaded. Get on the water at daylight and you catch fish. Sleep in and you fight the heat.

OFFSHORE
Yellowfin and blackfin on the floaters and the rigs. August through October is historically the best stretch of the year out there. Live pogies when we can get them. Mahi under anything floating. Wahoo and marlin still in the mix. Mangrove snapper stacked on structure and eating everything you drop.

RED SNAPPER
Louisiana has been open seven days a week since May 1. Four fish per person, 16 inch minimum. Through July 12, LDWF reported 74.7 percent of the state's 882,439 pound quota already landed. When it fills, it closes. That clock is real.

INSHORE
Trout and reds fire early. Live shrimp under a popping cork, soft plastics on moving water, then the bite slides deeper once the sun climbs. Tarpon are in the passes right now. Southwest Pass, Empire, Grand Bayou. That's the Tarpon Triangle and August is when it happens. Watch floating structure for tripletail.

Bottom line: first light and moving water. Our guides handle the rest.
Best bite: Yellowfin offshore, trout and reds at daybreak
Best technique: Live bait on the rigs, popping corks in the marsh
Best conditions: Early morning tide before the afternoon storms build

The boats leave before the sun does.

Coffee on the porch at four thirty. Nobody talking much, nobody fully awake. Then you are running south in the dark with the river wide open on both sides and the dock lights shrinking behind you.

By noon it is ninety five degrees and the box is full. Somebody is already asleep on the ride back in.

August afternoons belong to the pool. The thunderheads stack up over the marsh most days around three and come through hard for twenty minutes, and there is nothing to do but sit under the roof and watch the rain blow sideways off the river. Then it clears, the air cools off, and you can smell whatever Chef Raymond has going inside.

Oysters on the deck when the second boat gets in. Fish from that morning on the plate by dark. Somebody telling the story about the one that broke off, and it gets bigger every time he tells it.
That is August in Venice. Hot, loud, and worth every minute.
