Uneven pancakes on a portable griddle? Don’t just “turn the heat down”—use zones + rotation.
Try this camp-breakfast system: Map → Zone → Rotate
1) Preheat longer than you think (10–15 minutes), then aim for about 350–375°F on the surface.
2) Create 3 heat zones (even with one k**b):
- hot: pour/set the edges
- medium: cook through
- cool edge: hold finished pancakes warm
3) Rotate with intention:
- after 30–60 seconds (once edges look less glossy), slide off any hot spot
- after the flip, move to a slightly cooler area so the center cooks without scorching
4) For even browning: wipe the griddle thin, then butter (too much oil = blotchy “fried” patches).
5) Two sneaky fixes: block the wind and level the griddle so batter doesn’t run.
Bonus: use a 1/4 cup scoop so every pancake finishes at the same time (kids love being the “official scooper”).
