It’s been a while since we’ve done a “Food Preservation Monday” post and there’s lots going on in the gardens and the kitchen this time of year. A small but wonderful haul today.
Our currants are starting to ripen. Everyday we pick what’s ripe and flash freeze them until we have enough for a batch of the most amazing currant jam 🫙
We harvest chamomile almost everyday for herbal teas 🫖 We do love using it fresh in tea (it’s more potent). Maybe it’s in my head, but I find just harvesting it to be soothing 🤷♀️
We picked some of our beautiful purple and white branching cauliflower to . We added lots of pickling spices, garlic, red onion, spicy peppers. We packed it into a 1/2 gallon jar with and spring water. We will park it in a dark space so it can do its gut health thing and it should be ready by the end of the week.
The purple broccoli 🥦 will be sautéed for dinner tonight and the pac choy will be for tomorrow.
And finally… strawberries 🍓 are ripening and we harvested enough to make a big batch of strawberry margarita jam (for all that have been waiting for for it to come back on the shelves).
