Meet Ryan Pearson, the Executive Chef at Populus Denver, overseeing the culinary programs at Pasque Denver, Stellar Jay, and the hotel’s banquets.
With experience spanning some of the country’s most acclaimed kitchens and distinguished hotel dining programs, Ryan brings a thoughtful approach to cooking that celebrates seasonal ingredients, local producers, and the unique character of Colorado.
A New Orleans native, Ryan’s culinary journey has taken him from Michelin-starred kitchens in New York to Paris, where he deepened his foundation in French technique and classical cuisine. He later served as Executive Sous Chef at Bâtard, part of the team that earned the James Beard Award for Best New Restaurant in America, before leading food and beverage operations at the Eliza Jane Hotel in New Orleans and the culinary program at Lotte Hotel in Seattle.
Now in Denver, Ryan brings together his diverse culinary background and passion for hospitality to create dining experiences rooted in a strong sense of place, allowing the ingredients and flavors of Colorado to take center stage.
