There’s an art form where the ocean becomes the canvas.

It’s called Gyotaku — the centuries-old Japanese practice of nature printing — and this November, we’re honored to have one of the world’s leading practitioners, Dwight Hwang, teaching it in person.
His “living impressions” have been exhibited at the Smithsonian and the Natural History Museum of Los Angeles County. This fall, they come to Newport Ranch.

Behind our kitchen is a larder built entirely from the Ranch itself.

Executive Chef Nick Wells and Adam Lawrence along with our team preserve what the land and sea provide across the seasons: meadow, redwood forest, coastline, and everything in between, harvesting each ingredient at its peak and building flavors meant to stay with you long after the meal.

It’s a practice rooted in close attention: knowing a place well enough to know exactly when it’s ready to give something back.

Stinging nettle cavatelli—made with nettles gathered right here on the ranch. The leaves are blanched and pureed into a deep green paste, then folded into flour and egg yolk to form a soft, earthy dough. Hand-rolled into small, curved cavatelli, each piece carries notes of spring.
