late 1800’s. The Holbrook family began
restoring them in 1978, and Cornelia Holbrook
opened the Cushman-Colson house as Sweetwater Inn in 1993. Sweetwater now features 29 rooms and cottages, with our
lush Florida gardens complete with babbling
fountains, romantic gazebo, colonnade, and 30 foot in-ground heated salt pool and spa! Every reservation includes a complimentary
evening wine & cheese hour as well as a
delicious homemade breakfast each morning. We’d love to be your home-away-from-home. Sweetwater’s location is perfect. We’re right on University Avenue
in historic Downtown Gainesville;
mere blocks from the University of Florida,

Life is short… eat the dessert first! 🍰

From crispy, creamy cannoli to rich chocolate mousse, refreshing key lime mousse, perfectly caramelized crème brûlée, and the sweetest little pastries from our High Tea, we think there’s always room for something sweet at Sweetwater.

This National Dessert Day, we’re giving our sweet treats the spotlight they deserve. After all, a little indulgence is part of the experience!

What’s the secret to the perfect frittata? According to Cornelia, it starts with seasoning well, a little patience, and one very important rule: there’s NEVER enough cheese!

In this behind-the-scenes look at breakfast at Sweetwater, our owner Cornelia shares her tips for making a delicious, homemade frittata:

🥬 Start by sautéing your veggies with plenty of seasoning. Don’t be shy!
🥚 Add your egg and milk mixture, stirring constantly while it cooks on the stovetop.
🔥 Once it’s about halfway cooked, transfer it to the oven at 300–350°F for approximately 30 minutes, depending on the size of your frittata.
🧀 Finish with plenty of cheese, because can you really ever have too much?

It’s little touches like these that make breakfast at Sweetwater so special. A homemade breakfast is included with every stay, and we think that’s a pretty delicious way to start your morning.
