Sometimes we get a little ahead of ourselves...

After a fast trip to Fredericksburg to test some pairings with Rhyne Wines, we're well ready and prepped with a good game plan for their dinner. And let me just tell you ... her rosé is *to die for*. Generally I like rosé, but her treatment of this grape and the wine she produces has all the rosé flavor you expect, but has almost a creamy finish without that tight minerality you that is so characteristic. It's so unexpected and really lovely. All three of the wines we tested were excellent. We're excited for this dinner and to share her very special wines.

In late August, JeriLynne Clifford, The Hill Country Bon Vivant will be here; we'll be cooking selections from her cookbook and pairing with Texas wines. With some extra lemons in the bowl, we decided to try Victoria Calais' Lemon Crème Brûlée tart last night. So good! I forgot my mint for the photo, but it looks *almost* as fancy as Victoria's! We had a very enjoyable tasting with Ben Calais of Calais Winery and French Connection Wines on Friday morning so hopefully there's a great pairing for this delightful, summery dessert.

It has been a lovely trip to Fredericksburg so far. We booked a little place where we could cook a few menu items and test the pairings for Rhyne Wines - Bene & Richy drove over, brought two friends, and the six of us had an enjoyable evening. Then Bene & Richy invited us back to their place where we cracked open one more bottle of wine and sat on the porch.

A quick breakfast stop and then we're off to a few appointments and then we're back to the B&B late this afternoon.
