Not the grab-and-go kind. The kind where a kid studies the menu like it's the most important decision of the trip — because honestly, it might be. Lilikoi dreamsicle or lava flow? Mac nut ice cream filling or haupia cream? These are real questions.

It started as a family-run hotel in Kona. Opened in the 1970s. Generations of guests, same worn hallways, same view of the bay.

Then we got to work.

Six months later: the lava rock walls stayed — they earned that. Everything else got reimagined. Softer beds, better linens, a lobby that actually feels like somewhere. A P/19 mug waiting on your counter.

Three minutes to Kailua Pier. Four thousand square miles of island beyond that.

The resort was never the destination anyway.

You almost drive past it. Then the smoke hits.

On the side of the road in Waimea, GJ's has a custom-built rotisserie the size of a trailer — dozens of whole chickens turning slow over open coals. The man in the straw hat has been doing this for years. His wife is right beside him. There's pancit. There's lumpia. There's a line that moves with the kind of ease that tells you people here are in no rush.

You came up for the drive. You're staying for the chicken. You'll be back next trip.

GJ's Huli Chicken — Waimea town. 40 miles from Pacific 19, and one of the best reasons to go beyond.

You leave Kona with the windows down. The coast disappears in your mirrors as the road climbs.

Somewhere around the first bend, the island stops looking like a postcard. It starts looking like itself — wide open, quiet, unhurried. Cattle in the grass. A lone tree against a heavy sky. The kind of landscape that asks you to slow down without saying a word.

Route 190 won't make anyone's top ten list. That's exactly why you should drive it.

Sweet, then mysterious. That's andagi.

A Okinawan fried dough that found its way to Hawai'i and never left. Crisp outside, chewy within — part donut, part mochi, fully its own thing.

Some things you just have to try to understand.
