A simple question became the beginning of Watershed.

While sitting on the beach with his daughter, Chef Ben Warwick wondered where the white sand beneath them came from. His curiosity led him back to the Appalachian Mountains and to a larger story of the water that connects our mountains, rivers, farms, and the Gulf.

That journey inspired Watershed, the first chapter of Appalachian Nature, our evolving tasting series rooted in the landscapes, foodways, and stories of this region.

Twelve seats. Ten courses. One story told through food.

The best fall days at Windy Hill begin in the field and end around the table.

This October, we welcome Kristin Webber, founder of Chicken Librarian, for Covey Collective, a weekend shaped by the sporting traditions and hospitality of East Tennessee.

With only six spots available, the weekend will move at an easy pace. Mornings begin outside, learning in the field and following the dogs on a quail hunt. There will be time in the garden, time spent cooking alongside our team, and evenings gathered at Wilder over a menu inspired by the season.

For those who have grown up with these traditions and those experiencing them for the first time, there is a place for you here.
