Sampler House Kale Soup: “Soupish Caldene”

Every so often, you get lucky and stumble into a recipe creation that really seems to hit the mark. This started as a “last of season” Kale gift from our friends Deborah & Peter who own the Sampler House B & B in Milton Village, VT…combine that with some Fall River Portuguese influence + Indian spices and this became a good polar vortex breaker!
- 1/3 cup chopped garlic (from jar)
- 1/3 cup Lemongrass paste
- 1 large onion chopped
- 10-20 mushrooms sliced thin
- 4 stalks Celery sliced thin on bias
- 4 cups rough chopped Kale
- 1 large tomato chopped
- 1 tbls “Better Than Bullion” chicken flavor
- 18 oz homemade chicken stock
- 2 sticks of Andouille sausage (or Labudda’s Kielbasa or Portuguese Chourico)
Combine above in a pot, bring to a rolling boil, then cut down to simmer. Immediately prepare Indian spices per the next sequence:
- 2 tbls veg oil or olive oil
- 3 tbls PANCH PURAN (Indian 5 spice mix)
Heat oil and spice mix together on med heat until spice pops, continue popping for 40 sec. to 1 minute. Pour directly into simmering soup.
Continue to simmer soup for 30-45 minutes. Add to pot:
- One 15.5 oz. can GOYA brand Black Beans
- One 15.5 oz. can GOYA brand Red Kidney Beans
- Extra Water if needed
- Salt & coarse ground black pepper to taste
Simmer for a further 15-20 minutes and serve with rustic bread

We have some very creative people stay at our little B & B! Recently Sue and Mike stayed in the FROG (Finished Room Over Garage.) these lovely guests were her visiting family, so we hope they will return often. Sue is an accomplished cake maker/ confectionary artist. She made this amazing Chocolate African Violet creation.
